SAUSAGE BOMBS

really easy to make

Serves 2

  • 500g (1 lb) potatoes, peeled and cubed
  • knob of butter
  • 2 tablespoons milk
  • 6 sausages
  • 1 egg, beaten
  • 125g (4 oz) fresh or dried golden breadcrumbs
  • seasoning
  • vegetable oil for frying

Method

  1. Cook the potatoes in boiling water for 10 – 15 minutes until tender. Drain well and mash with the butter, milk and a little seasoning.
  2. Meanwhile fry the sausages for around 8 minutes, or until cooked through. Cover each sausage in a coat of mashed potato. Roll in egg and then in breadcrumbs.
  3. Heat 5 cm (2 inches) of vegetable oil in a frying pan and cook the bombs, three at a time for 5 minutes or until crisp and golden. Drain on kitchen paper and serve with baked beans.
