SWEETCORN CHOWDER
vegetarian & really easy to make
A chowder is traditionally a thick soup. The name is usually given to any soup that is thickened with potato.
Serves 2
- 500g (1 lb) potatoes, peeled and diced
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 1 small green chilli, finely chopped
- 1 red pepper, diced
- 600 ml (1 pint) milk
- 1 vegetable stock cube
- 125g (4 oz) natural fromage frais
- 400g (14 oz) can sweetcorn, drained

- Optional – 4 rashers bacon, chopped
Method
- Boil the potatoes in salted boiling water for 10-15 minutes until tender.
- Meanwhile, heat the oil in a large pan and fry the onion, (bacon- optional), chilli and pepper for 5 minutes until softened. Add the milk and the stock cube and simmer gently for 10 minutes.
- Mash half the potato until smooth and stir into the soup with the rest of the diced potato and the sweetcorn. Simmer together for 10 minutes. Stir in the fromage frais, season to taste and serve with crusty bread.
