WELSH RAREBIT

vegetarian, really easy & quick to make

This method may not be true to the original which is rather time consuming, but it tastes almost as good. Top each slice with a poached egg to make Buck Rarebit.

 

Serves 1

  • 60g (2 oz) Cheddar, grated
  • 1 teaspoon English mustard
  • 1 tablespoon Worcestershire sauce
  • small knob of butter
  • 2 slices of toast

Method

  1. Beat together the cheese, mustard, Worcestershire sauce and butter to make a paste.
  2. Spread on the toast and place under the grill for 3 minutes until bubbling and golden.
