This method may not be true to the original which is rather time consuming, but it tastes almost as good. Top each slice with a poached egg to make Buck Rarebit.

60g (2 oz) Cheddar, grated
1 teaspoon English mustard
1 tablespoon Worcestershire sauce
small knob of butter
2 slices of toast
Method
Beat together the cheese, mustard, Worcestershire sauce and butter to make a paste.
Spread on the toast and place under the grill for 3 minutes until bubbling and golden.
