COURGETTE WHEELS WITH HOT SALSA

Serves 2

  • 1 egg
  • 2 tablespoons milk seasoning
  • olive oil, for frying
  • 2 tablespoons flour
  • 1 large courgette, thinly sliced

For The Salsa

  • 250g (8 oz) ripe tomatoes, finely chopped
  • 2 small chillies, finely chopped
  • 2 garlic cloves, finely chopped (or use a garlic press)
  • 1 small onion, finely chopped
  • 1 tablespoon chopped fresh coriander
  • 1 tablespoon olive oil
  • seasoning

Method

  1. Mix together the tomatoes, chilli, garlic, onion, coriander, olive oil and seasoning and set aside whilst you fry the courgettes.
  2. Beat together the egg, milk and a little seasoning. Heat 1 cm (½ inch) of oil in a large frying pan. Season the flour. Dip the courgettes first into the flour, shake of any excess, dip into the egg and then fry for 2 minutes on each side until golden. Drain on kitchen towel and serve immediately with the hot salsa.
