vegetarian, gluten free, really easy & quick to make
Make the most of the juicy cobs of corn that are cheap and available in the summer months. You can also flavour the butter with herbs, garlic or chilli, if you wish.
Serves 1
1 corn cob
knob of butter
salt
Method
Peel back the husks, remove the silky threads and trim the stem. Bring a large pan of water to the boil, but do not add salt as it hardens the kernels during cooking.
Cook in the boiling water for 7 minutes, until the corn is bright yellow. Remove with a slotted spoon, smother with butter and sprinkle with salt. Eat immediately, using your fingers.
