SCRAMBLED EGGS ON TOAST

vegetarian, really easy & quick to make

A brilliant snack at any time of the day. Try adding different flavourings or ingredients such as chopped fresh herbs, a spoonful of tartare sauce, chopped ham, or diced tomatoes. Of course, if you’re celebrating, the classic addition to scrambled eggs is smoked salmon.

 

Serves 1

  • 2 eggs
  • 2 tablespoons milk
  • knob of butter
  • 2 thick slices of hot buttered toast
  • ½ tablespoon freshly grated Parmesan
  • salt and freshly ground black pepper

Method

  1. Lightly beat together the eggs, milk and seasoning.
  2. Melt the butter in a small pan. Toss in the eggs and stir with a fork until just set, but still a little runny, take care not to overcook.
  3. Turn onto the hot toast and sprinkle with a little grated Parmesan and a sprinkling of black pepper.
