EGGY BREAD

vegetarian & really easy to make

The secret of eggy bread is to leave the bread soaking in the egg for as long as you can, 20 minutes is ideal. Why not try an eggy bread sandwich, which is great for breakfast on a weekend. Simply make up a cheese sandwich, (mozzarella, tomato and basil is my current favourite) and soak and fry in the usual way. If you have any egg mixture left over, pour it on top of the bread as it is cooking in the pan.

 

Serves 1

  • 1 egg
  • 2 tablespoons milk
  • 2 slices of white bread
  • vegetable oil for frying
  • seasoning

Method

  1. Beat the egg and milk together in a shallow dish and dip in the bread. Press down with a spatula so the bread absorbs the liquid.
  2. Heat a little oil a frying pan and cook the bread for 3-4 minutes on each side until puffed and golden. Drain on kitchen paper and eat straightaway.
