MUSHROOM FRITATA

vegetarian & really easy to make

A fritata is a spongy Italian omelette which, is cooked slowly, cut into wedges and eaten hot or cold. Left over fritata can be cut into chunks, simmered for a few minutes in a simple tomato sauce and served with buttered new potatoes and salad.

 

Serves 2

  • 4 eggs, beaten
  • 2 slices of white bread, grated
  • 1 garlic clove, sliced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon freshly grated Parmesan
  • 2 tablespoons olive oil
  • 125g (4 oz) mushrooms, sliced
  • Seasoning

Method

  1. Mix together the eggs, breadcrumbs, garlic, parsley, and Parmesan and season well.
  2. Heat the olive oil in a frying pan and cook the mushrooms for 4-5 minutes until softened. Tip in the egg mixture and smooth over with a spatula.
  3. Cook slowly for about 5 minutes, until golden under-neath. Carefully turn over and cook the other side until golden.
