CHEESE AND HAM PASTIES

Quick to make

Why not make double the recipe – these little pasties are good for a packed lunch.

 

Serves 2

  • 250g (8 oz) ready made puff pastry, thawed if frozen
  • 180g (6 oz) Cheddar or similar cheese, grated
  • 60g (2 oz) wafer thin ham
  • 1 tablespoon chopped fresh parsley or chives
  • 1 egg
  • 2 tablespoons milk
  • seasoning

Method

  1. Preheat the oven to 220C,425F, Gas 7. Roll the pastry out into a large rectangle, measuring 30 cm x 15 cm (12inch x 6 inch). Cut in half to give two 15 cm (6 inch) squares.
  2. Sprinkle the cheese on one half of each square and season well. Top with the chopped herbs and the ham. Beat together the egg and milk and brush a little around the edges. Fold over to make a triangle and press down well along the edges to seal.
  3. Transfer to a baking sheet and brush all over with the egg. Place in the oven for 15-20 minutes until puffed and golden.

Serve with salad or vegetables.
