Serves 2
- 250g (8 oz) ready made puff pastry, thawed if frozen
- 180g (6 oz) Cheddar or similar cheese, grated
- 60g (2 oz) wafer thin ham
- 1 tablespoon chopped fresh parsley or chives
- 1 egg
- 2 tablespoons milk
- seasoning
Method
- Preheat the oven to 220C,425F, Gas 7. Roll the pastry out into a large rectangle, measuring 30 cm x 15 cm (12inch x 6 inch). Cut in half to give two 15 cm (6 inch) squares.
- Sprinkle the cheese on one half of each square and season well. Top with the chopped herbs and the ham. Beat together the egg and milk and brush a little around the edges. Fold over to make a triangle and press down well along the edges to seal.
- Transfer to a baking sheet and brush all over with the egg. Place in the oven for 15-20 minutes until puffed and golden.
Serve with salad or vegetables.
