Serves 2125g (4 oz) small button mushrooms30g (1 oz) butter1 large garlic clove, finely chopped (or use a garlic press)1 teaspoon lemon juice1 teaspoon chopped fresh parsleySeasoningMethodHeat the butter until foaming, but not brown. Toss in the mushrooms and garlic and cook for 2 minutes.Add the lemon juice and seasoning, cover with a lid and cook gently for 5 minutes.Remove the lid and cook for a further 5 minutes, until softened. Stir in the parsley and serve.
