BARBECUED SPARE RIBS

really easy to make

They are excellent as a snack or a meals.

 

Serves 2

  • 500g (1 lb) pork spare ribs
  • 2 tablespoons flour

For The Barbecue Sauce

  • 1 tablespoon dark soy sauce
  • 1 tablespoon tomato purée
  • 2 tablespoons clear honey
  • 2 garlic cloves, finely chopped
  • 1 cm (½ inch) piece fresh ginger, peeled and grated
  • juice of an orange
  • 1 teaspoon English mustard

Method

  1. Place the flour, a little seasoning and the ribs together in a plastic bag. Shake the bag to coat the ribs.
  2. Mix together all the sauce ingredients.
  3. Shake any excess flour off the ribs, dip into the sauce and place on a foil lined grill pan.
  4. Place under a hot grill for about 30 minutes, turning and basting frequently with the remaining sauce until brown, shiny and cooked through. In the summer these ribs can be cooked on a barbecue.
