pescatarian & really easy to make

Fresh ginger can be bought in most supermarkets, a small piece won’t cost a lot.

 

Serves 2

  • 2 tablespoons olive oil
  • 2 garlic cloves, chopped, (or use a garlic press)
  • 1 cm (½ inch) piece fresh ginger, peeled and finely chopped
  • 125g (4 oz) button mushrooms, sliced
  • 125g (4 oz) broccoli florets
  • 60g (2 oz) frozen peas
  • 125g (4 oz) large peeled prawns
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame seeds
  • seasoning

Method

  1. Heat the oil in a wok and quickly stir-fry the garlic and ginger for 2 minutes. Add the vegetables and prawns and cook for a further 5 minutes.
  2. Add the soy sauce and 2 tablespoons of water and season to taste. Sprinkle in the sesame seeds and cook for 2 minutes until the vegetables are just tender and the stir-fry is piping hot. Serve with boiled rice or noodles.
