TUNA & BEAN SALAD
pescatarian gluten free & really easy to make
Layers of beans, cucumber, tomatoes, onions and tuna, moistened with a garlic lemon dressing
Serves 2
- 400g (14 oz) can mixed beans, drained
- half a cucumber, diced
- 2 tomatoes, diced
- 1 tablespoon chopped fresh parsley
- 1 red onion, thinly sliced into rings
- 180g (6 oz) can tuna in oil, drained
- 2 tablespoons olive oil
- juice of half a lemon
- 1 garlic clove, crushed (or use a garlic press)
- seasoning
Method
- Place the beans, cucumber, tomatoes and parsley in a bowl and mix well together. Transfer to a serving plate.
- Arrange onion rings and chunks of tuna on top of the beans. Whisk together the olive oil, lemon juice, garlic and plenty of seasoning. Drizzle over the salad and serve immediately.
