vegan, gluten free, lactose free & really easy to make
Tahini is sesame seed paste and can be bought in health food shops and selected supermarkets, you could use smooth peanut butter in its place. Hummus will keep covered in the fridge for a few days and is delicious spread thickly on hot buttered toast.
Makes 1 bowl
400g (14 oz) can chickpeas, drained
2 garlic cloves, crushed (or use a garlic press)
6 tablespoons olive oil
4 tablespoons tahini (or smooth peanut butter)
juice of a lemon
seasoning
Method
Mash together the chickpeas and garlic until fairly smooth. Gradually beat in the olive oil to give a creamy consistency.
Stir in the tahini, lemon juice and seasoning, adding more, or less, than the given amounts, to suit your taste.
