HAM & CHEESY POTATO PIE
Really easy to make
Serves 2
- 500g (1 lb) potatoes, peeled and cubed
- 30g (1 oz) butter or margarine
- 2 tablespoons milk
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 large leek, sliced
- 125g (4 oz) mushrooms, sliced
- 60g (2 oz) ham, cut into small squares
- 125g (4 oz) Cheddar cheese, grated

Method
- Cook the potatoes in plenty of boiling salted water for 10-15 minutes until tender. Drain them well, return to the pan and mash together with the butter, milk and some seasoning.
- Meanwhile, heat the oil in a large frying pan and cook the onion, leek and mushrooms together for 5 minutes. Then add to the pan of mashed potatoes with the ham and half the cheese. Mix well and check the seasoning.
- Transfer the mixture to a heatproof dish, sprinkle over the remaining cheese and place under a hot grill for 3-4 minutes until the cheese is bubbling and golden brown.
