HAM & CHEESY POTATO PIE

Really easy to make

Serves 2

  • 500g (1 lb) potatoes, peeled and cubed
  • 30g (1 oz) butter or margarine
  • 2 tablespoons milk
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 large leek, sliced
  • 125g (4 oz) mushrooms, sliced
  • 60g (2 oz) ham, cut into small squares
  • 125g (4 oz) Cheddar cheese, grated
  • seasoning

Method

  1. Cook the potatoes in plenty of boiling salted water for 10-15 minutes until tender. Drain them well, return to the pan and mash together with the butter, milk and some seasoning.
  2. Meanwhile, heat the oil in a large frying pan and cook the onion, leek and mushrooms together for 5 minutes. Then add to the pan of mashed potatoes with the ham and half the cheese. Mix well and check the seasoning.
  3. Transfer the mixture to a heatproof dish, sprinkle over the remaining cheese and place under a hot grill for 3-4 minutes until the cheese is bubbling and golden brown.
