CHILLI CON CARNE
gluten free & really easy to make
A hot spicy mixture of beef, chillies, tomatoes and kidney beans.
Serves 2-3
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 garlic clove, finely chopped (or use a garlic press)
- 1 fresh chilli, finely chopped
- 250g (8 oz) lean minced beef
- 400g (14 oz) can chopped tomatoes
- 400g (14 oz) can red kidney beans, drained
- 2 teaspoons hot chilli powder

Method
- Heat the oil in a large frying pan and cook the onion, garlic, chilli and mince for 5 minutes until the vegetables are softened and the meat is no longer pink.
- Stir in the tomatoes, kidney beans, chilli powder and a little seasoning. Cover and simmer for 45 minutes.
- Serve with ready-made tacos or boiled rice.
