A fabulously, warming dish that takes just a few minutes to prepare.
Serves 2
1 large potato, peeled and cubed
1 tablespoon olive oil
2 bacon rashers, roughly chopped (optional)
2 leeks, sliced
1 apple, cubed
3 leaves Savoy cabbage, shredded
2 tablespoon soy sauce
2 large, thick slices of hot buttered toast

Method
Par-cook the potatoes in boiling, salted water for 5 minutes.
Meanwhile, stir-fry the bacon and leeks for 3 minutes, add the drained potato cubes and continue to cook for 5 minutes. Add the apple, cabbage, soy sauce and about 5 tablespoons of water and cook for a further 5 minutes.
Pile on top of the hot buttered toast and serve immediately.
