PANCAKES
vegetarian, really quick & easy to make
Pancakes are a fantastic base for lots of different meals. They are used extensively in Mexican, Chinese and French cooking as well as English. Try cooking some of the following recipes next time you’re stuck for ideas.
Makes 8
- 125g (4 oz) flour
- ¼ teaspoon of salt
- 300 ml (h pint) milk
- 1 egg, beaten
- small knob of butter, melted
- vegetable oil, for frying
Method
- Sieve the flour and salt into a bowl and make a well in the centre.
- Add the egg and milk and whisk vigorously to make a smooth batter. Beat in the melted butter.
- Heat a little oil in a small, shallow non-stick frying pan.
- Spoon in 2 tablespoons of mixture and swirl to cover the base of the pan. Cook for a few seconds, flip over and cook the second side. Repeat to make 8 pancakes in total.
STUFFING SUGGESTIONS
Try adding chopped herbs to the basic batter, cook and fill with one of the suggestions. Roll up, sprinkle over a little grated cheese heat through under the grill.

SWEET IDEAS
Sprinkle hot pancakes with a little caster sugar and top with one of the following:
- Toasted marshmallows with melted chocolate
- Mashed banana and Greek-style yogurt
- Canned mandarin segments with condensed milk
- Grilled peach slices with honey and flaked almonds
- A squeeze of orange or lemon juice
