TOAD IN THE HOLE

really easy to make

Toad in the hole doesn’t usually have onions it, but I think they add flavour and texture to the dish. If you’re a traditionalist, leave them out. It is important to heat a little oil in the baking dish before you pour in the batter as it creates a seal and prevents sticking.

 

Serves 2

  • 60g (2 oz) flour
  • 1 egg, beaten
  • 150 ml (¼ pint) milk
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced into rings
  • 250g (8 oz) pork sausages
  • seasoning

Method

  1. Preheat the oven to 200C,400F, Gas 6. Sift the flour into a bowl with a little salt and pepper. Make a well in the centre and pour in the egg and half the milk. Beat to make a stiff batter and gradually work in the remaining milk. Set aside to rest for a few minutes while you fry the sausages.
  2. Heat 1 tablespoon oil in a large frying pan and cook the sausages and onion rings for 10 minutes until golden.
  3. Remove and drain. Place remaining tablespoon of oil in a shallow, heat proof dish and place in the oven for a few minutes. Remove the dish from the oven and put in the sausages and onions. Pour over the batter and bake for 30 minutes until the batter has risen and is crisp and golden.
