APPLE RICE SALAD

vegetarian & really easy to make

A fresh tasting rice salad with apples, cheese, onion and red peppers.

 

Serves 2

  • 180g (6 oz) long grain rice
  • 2 green apples
  • juice and grated rind of a lime
  • 1 red onion, finely chopped
  • 125g (4 oz) cheese, e.g., Cheddar, Edam, diced
  • 1 red pepper, diced
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh coriander or parsley
  • Seasoning

Method

  1. Wash the rice well and cook in boiling water for 15-2 minutes until tender. Drain well and set aside to go col
  2. Meanwhile, dice and core the apples and toss in the lime juice. Place in a large bowl with the red onion cheese, red pepper, olive oil, rice, herbs and seasoning
  3. Toss well together and serve.
