LEMON CHICKEN RICE
gluten free & really easy to make
Very easy dish of chicken pieces cooked on a bed of lemon flavoured rice.
Serves 2
- 250g (8 oz) long grain rice
- juice and grated rind of a lemon
- 1 tablespoon chopped fresh parsley
- 2 garlic cloves, finely chopped (or use a garlic press)
- 2 chicken pieces, skinned
- small knob of butter
- 600ml (1 pint) chicken stock
- seasoning
Method
- Preheat the oven to 180C,350F, Gas 4. Place the rice, lemon rind, parsley, garlic and a little seasoning in a large bowl and mix well together. Tip into a large roasting tin.
- Spread the butter over the chicken pieces, sprinkle lightly with salt and pepper and press firmly into the bed of rice.
- Mix together the lemon juice and stock and pour over the rice and chicken. Cover with foil and bake for 1 hour, until the chicken is cooked through and the rice is tender.
