PASTA WITH WALNUTS & CORIANDE
vegetarian, really easy & quick to make
This creamy dish is amazingly quick and easy to prepare. Add a bit of variety to the dish by experimenting with different nuts such as hazelnuts, almonds or even peanuts.
Serves 2
- 250g (8 oz) pasta
- 1 tablespoon olive oil
- 125g (4 oz) cream cheese
- 60g (2 oz) Cheddar cheese
- 60g (2 oz) chopped walnuts
- 2 tablespoons chopped fresh coriander
- salt and freshly ground black pepper
Method
- Cook the pasta in plenty of lightly salted boiling water for about 12 minutes, or until tender.
- Meanwhile, beat together the olive oil, cream cheese, Cheddar, walnuts, coriander and plenty of seasoning.
- Drain the pasta, toss in the cheese mixture and mix well together for 1 or 2 minutes until the cheese melts and coats the pasta. Divide into 2 bowls and serve with a sprinkling of black pepper and coriander.
