PASTA WITH WALNUTS & CORIANDE

vegetarian, really easy & quick to make

This creamy dish is amazingly quick and easy to prepare. Add a bit of variety to the dish by experimenting with different nuts such as hazelnuts, almonds or even peanuts.

 

Serves 2

  • 250g (8 oz) pasta
  • 1 tablespoon olive oil
  • 125g (4 oz) cream cheese
  • 60g (2 oz) Cheddar cheese
  • 60g (2 oz) chopped walnuts
  • 2 tablespoons chopped fresh coriander
  • salt and freshly ground black pepper

Method 

  1. Cook the pasta in plenty of lightly salted boiling water for about 12 minutes, or until tender.
  2. Meanwhile, beat together the olive oil, cream cheese, Cheddar, walnuts, coriander and plenty of seasoning.
  3. Drain the pasta, toss in the cheese mixture and mix well together for 1 or 2 minutes until the cheese melts and coats the pasta. Divide into 2 bowls and serve with a sprinkling of black pepper and coriander.
