CORNED BEEF HASH
Quick & Really Easy To Make
Corned beef hash is an amazing dish because it uses few ingredients and yet manages to taste great. Keep a can of corned beef in your cupboard for emergencies and you’ll be able to knock up a filling supper in no time.
Serves 2
- 350g (12 oz) potatoes, unpeeled and cubed
- 200g (7 oz) can corned beef, roughly diced
- 2 tablespoons vegetable oil
- few drops Tabasco or hot chilli sauce
- seasoning
Method
- Cook the potatoes in boiling salted water for 10 or 15 minutes until tender. Drain well.
- Heat the oil in a large frying pan and toss in the potatoes, corned beef, seasoning and Tabasco or hot chili sauce. Mash together roughly with a fork and leave for 5 minutes so that the base develops a crust. Break up and turn the mixture with the fork and then leave again for a further 5 minutes so that it develops a new crust.
- By now, the hash should be heated right through. Check the seasoning, adding a little more Tabasco or chilli sauce if liked and divide onto two warm plates.
Serve with baked beans for a complete meal.
