60g (2 oz) cheese, grated. (Use whatever cheese you have in the fridge for this recipe)
1 teaspoon English mustard
small knob of butter or margarine
seasoning
Method
Split the potato in half and scoop out the flesh to leave a hollow potato shell about 1 cm (½ inch) thick. Place the flesh in a bowl with the ham, cheese, mustard, butter and seasoning and mash well together.
Pile the filling back into the potato and return to the oven for 15 minutes until golden.
