MUSHROOM FRITATA
vegetarian & really easy to make
A fritata is a spongy Italian omelette which, is cooked slowly, cut into wedges and eaten hot or cold. Left over fritata can be cut into chunks, simmered for a few minutes in a simple tomato sauce and served with buttered new potatoes and salad.
Serves 2
- 4 eggs, beaten
- 2 slices of white bread, grated
- 1 garlic clove, sliced
- 2 tablespoons chopped fresh parsley
- 1 tablespoon freshly grated Parmesan
- 2 tablespoons olive oil
- 125g (4 oz) mushrooms, sliced
- Seasoning
Method
- Mix together the eggs, breadcrumbs, garlic, parsley, and Parmesan and season well.
- Heat the olive oil in a frying pan and cook the mushrooms for 4-5 minutes until softened. Tip in the egg mixture and smooth over with a spatula.
- Cook slowly for about 5 minutes, until golden under-neath. Carefully turn over and cook the other side until golden.
