NICOISE SALAD

pescatarian gluten free, really easy to make

Salad Niçoise is an essential summertime recipe.

It can be made a number of ways but generally contains hard boiled eggs, anchovies and black olives.

 

Serves 2

  • handful of small lettuce leaves,
  • watercress or baby spinach
  • bunch of radishes, halved
  • bunch of spring onions, roughly chopped
  • 2 hard-boiled eggs, quartered
  • 2 large firm tomatoes, quartered
  • 10 anchovy fillets in oil, drained
  • 200g (7 oz) can tuna in oil, drained and flaked
  • 60g (2 oz) black olives
  • 2 tablespoons olive oil and juice of half a lemon, mixed in a bowl
  • seasoning

Method

  1. Arrange the lettuce leaves on 2 plates and top with radishes, spring onions, eggs, tomatoes, anchovies and flakes of tuna. Scatter over the olives and a little seasoning and drizzle with olive oil and lemon juice.
