NICOISE SALAD
pescatarian gluten free, really easy to make
Salad Niçoise is an essential summertime recipe.
It can be made a number of ways but generally contains hard boiled eggs, anchovies and black olives.
Serves 2
- handful of small lettuce leaves,
- watercress or baby spinach
- bunch of radishes, halved
- bunch of spring onions, roughly chopped
- 2 hard-boiled eggs, quartered
- 2 large firm tomatoes, quartered
- 10 anchovy fillets in oil, drained
- 200g (7 oz) can tuna in oil, drained and flaked
- 60g (2 oz) black olives
- 2 tablespoons olive oil and juice of half a lemon, mixed in a bowl
- seasoning
Method
- Arrange the lettuce leaves on 2 plates and top with radishes, spring onions, eggs, tomatoes, anchovies and flakes of tuna. Scatter over the olives and a little seasoning and drizzle with olive oil and lemon juice.
