A hot spicy mixture of beef, chillies, tomatoes and kidney beans.
Serves 2-3
1 tablespoon olive oil
1 onion, chopped
1 garlic clove, finely chopped (or use a garlic press)
1 fresh chilli, finely chopped
250g (8 oz) lean minced beef
400g (14 oz) can chopped tomatoes
400g (14 oz) can red kidney beans, drained
2 teaspoons hot chilli powder

Method
Heat the oil in a large frying pan and cook the onion, garlic, chilli and mince for 5 minutes until the vegetables are softened and the meat is no longer pink.
Stir in the tomatoes, kidney beans, chilli powder and a little seasoning. Cover and simmer for 45 minutes.
