CHILLI CON CARNE

gluten free & really easy to make

A hot spicy mixture of beef, chillies, tomatoes and kidney beans.

 

Serves 2-3

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 garlic clove, finely chopped (or use a garlic press)
  • 1 fresh chilli, finely chopped
  • 250g (8 oz) lean minced beef
  • 400g (14 oz) can chopped tomatoes
  • 400g (14 oz) can red kidney beans, drained
  • 2 teaspoons hot chilli powder
  • seasoning

Method

  1. Heat the oil in a large frying pan and cook the onion, garlic, chilli and mince for 5 minutes until the vegetables are softened and the meat is no longer pink.
  2. Stir in the tomatoes, kidney beans, chilli powder and a little seasoning. Cover and simmer for 45 minutes.
  3. Serve with ready-made tacos or boiled rice.
