HOT TOMATO BAGUETTE

vegetarian & really easy to make

Try topping these with some grated mozzarella or thin slices of onion or courgette.

 

Serves 2

  • 1 French stick
  • 2 tablespoons pesto sauce
  • 4 large tomatoes, sliced
  • 1 tablespoon olive oil
  • 2 garlic cloves, finely chopped (or use a garlic press)
  • 1 tablespoon freshly grated Parmesan
  • seasoning

Method

  1. Preheat the oven to 200C, 400F, Gas 6. Split the French stick in half lengthways. Spread thinly with pesto sauce and arrange the tomato slices on top.
  2. Brush the tomatoes with olive oil and sprinkle with garlic, seasoning and Parmesan. Bake directly on the oven shelf for about 8 minutes until hot and crunchy.
