SAUCY STIR-FRY ON TOAST

really easy and quick to make

A fabulously, warming dish that takes just a few minutes to prepare.

Serves 2

  • 1 large potato, peeled and cubed
  • 1 tablespoon olive oil
  • 2 bacon rashers, roughly chopped (optional)
  • 2 leeks, sliced
  • 1 apple, cubed
  • 3 leaves Savoy cabbage, shredded
  • 2 tablespoon soy sauce
  • 2 large, thick slices of hot buttered toast
  • seasoning

Method

  1. Par-cook the potatoes in boiling, salted water for 5 minutes.
  2. Meanwhile, stir-fry the bacon and leeks for 3 minutes, add the drained potato cubes and continue to cook for 5 minutes. Add the apple, cabbage, soy sauce and about 5 tablespoons of water and cook for a further 5 minutes.
  3. Pile on top of the hot buttered toast and serve immediately.
