A delicious savoury version of bread-and-butter pudding.
Serves 2
6 slices white bread, crusts removed
large knob of butter or margarine
180g (6 oz) Cheddar, or other cheese, grated
1 small onion, finely chopped
1 tablespoon chopped fresh parsley
1 large egg
300 ml (½ pint) milk

Method
Preheat the oven to 180C, 350F, Gas 4. Spread the butter on the bread and cut each slice into four triangles. Butter an ovenproof dish and arrange the bread in the dish sprinkling with cheese, onion, parsley and a little seasoning between each layer.
Beat together the milk and egg and season lightly. Pour the liquid over the layers and bake in the oven for 30 minutes until well risen and golden.
