A fresh tasting rice salad with apples, cheese, onion and red peppers.

180g (6 oz) long grain rice
2 green apples
juice and grated rind of a lime
1 red onion, finely chopped
125g (4 oz) cheese, e.g., Cheddar, Edam, diced
1 red pepper, diced
2 tablespoons olive oil
1 tablespoon chopped fresh coriander or parsley

Method
Wash the rice well and cook in boiling water for 15-2 minutes until tender. Drain well and set aside to go col
Meanwhile, dice and core the apples and toss in the lime juice. Place in a large bowl with the red onion cheese, red pepper, olive oil, rice, herbs and seasoning
