LEMON CHICKEN RICE

gluten free & really easy to make

Very easy dish of chicken pieces cooked on a bed of lemon flavoured rice.

 

Serves 2

  • 250g (8 oz) long grain rice
  • juice and grated rind of a lemon
  • 1 tablespoon chopped fresh parsley
  • 2 garlic cloves, finely chopped (or use a garlic press)
  • 2 chicken pieces, skinned
  • small knob of butter
  • 600ml (1 pint) chicken stock
  • seasoning

Method

  1. Preheat the oven to 180C,350F, Gas 4. Place the rice, lemon rind, parsley, garlic and a little seasoning in a large bowl and mix well together. Tip into a large roasting tin.
  2. Spread the butter over the chicken pieces, sprinkle lightly with salt and pepper and press firmly into the bed of rice.
  3. Mix together the lemon juice and stock and pour over the rice and chicken. Cover with foil and bake for 1 hour, until the chicken is cooked through and the rice is tender.
