SPAGHETTI ALLA CARBONNARA

really easy to make

Serves 2

  • 250g (8 oz) spaghetti
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, finely chopped (or use a garlic press)
  • 4 slices of smoked bacon, roughly chopped
  • 2 eggs, beaten
  • 150 ml (5 fl oz) carton single cream
  • 2 tablespoons grated Parmesan cheese
  • salt and pepper

Method

  1. Cook the pasta in plenty of lightly salted boiling water for 10-12 minutes until tender. Meanwhile heat the oil in a small frying pan and cook the garlic, onion, and bacon for five minutes until golden. Beat together the eggs, cream, half of the Parmesan and a little seasoning.
  2. Drain the pasta well and return to the pan. Quickly add the bacon mixture and the cream mixture and toss well together. Divide into two bowls, sprinkle over the remaining Parmesan and eat immediately.
