SAUSAGE, BAKED BEAN AND POTATO HOTPOT

Really easy to make

Serves 2

  • 350g (12 oz) potatoes, peeled and halved if large
  • 1 teaspoon vegetable oil
  • 250g (8 oz) sausages, cut into bite-sized pieces
  • 1 large onion, sliced
  • 400g (14 oz) can of baked beans
  • knob of butter or margarine
  • seasoning

Method

  1. Preheat the oven to 200C,400F, Gas 6. Partially cook the potatoes in salted boiling water for 10 minutes. Drain and set aside to cool slightly.
  2. Meanwhile, heat the oil in a large frying pan and cook the sausage pieces for 5 minutes until golden. Remove with a slotted spoon and set aside. Add the onion slices to the same pan and fry over a high heat for 5 minutes until tender and golden. The sausages will have released some of their fat into the pan so it shouldn’t be necessary to add any extra oil.
  3. Return the sausage pieces plus the baked beans to the frying pan, heat through and season to taste. Spoon the mixture into a deep casserole dish
  4. Thinly slice the potatoes and arrange them over the top of the bean mixture, overlapping them. Dot with butter, cover with a lid or foil and bake for 10 minutes. Remove covering and cook for a further 10 minutes until cooked through and golden-brown around the edges.
