SAUSAGE, BAKED BEAN AND POTATO HOTPOT
Really easy to make
Serves 2
- 350g (12 oz) potatoes, peeled and halved if large
- 1 teaspoon vegetable oil
- 250g (8 oz) sausages, cut into bite-sized pieces
- 1 large onion, sliced
- 400g (14 oz) can of baked beans
- knob of butter or margarine

Method
- Preheat the oven to 200C,400F, Gas 6. Partially cook the potatoes in salted boiling water for 10 minutes. Drain and set aside to cool slightly.
- Meanwhile, heat the oil in a large frying pan and cook the sausage pieces for 5 minutes until golden. Remove with a slotted spoon and set aside. Add the onion slices to the same pan and fry over a high heat for 5 minutes until tender and golden. The sausages will have released some of their fat into the pan so it shouldn’t be necessary to add any extra oil.
- Return the sausage pieces plus the baked beans to the frying pan, heat through and season to taste. Spoon the mixture into a deep casserole dish
- Thinly slice the potatoes and arrange them over the top of the bean mixture, overlapping them. Dot with butter, cover with a lid or foil and bake for 10 minutes. Remove covering and cook for a further 10 minutes until cooked through and golden-brown around the edges.
